scrambled eggs my way

on the weekends, i try to branch out from my usual morning breakfast consisting of greek yogurt, hard boiled eggs and fruit. i still find myself eating eggs, just a little differently

scrambled eggs my way

cast of characters
6 eggs (we have 3 people, 2 eggs per person so this is 6 eggs for us)
splash of milk
1/4 medium sweet yellow onion
1 bell pepper (or 1/2 of 2 different bell peppers)
1-2 tsp mccormick savory seasoning blend (i don't know what's in here but it's crack)
1/4 cup shredded cheese
1 tbsp olive oil
 
directions

  1. chop the onion and bell peppers into 1/4" pieces
  2. heat the oil in a pan. add the onion, peppers and seasoning. cook for a few minutes until the peppers have started to soften and the onion is turning transparent (you should also be able to smell the crack seasoning by now). while the onions and peppers are cooking, crack your eggs into a bowl and whisk until scrambled.
  3. add eggs to pepper and onion mixture. scrape the mixture from the sides eery so often to keep the eggs from sticking to the pan and make the scrambled egg texture. 
  4. when the eggs are no longer wet, sprinkle the cheese across the top and cook until melted.
  5. divide and conquer divide and serve  appropriate portion sizes based upon the number you are feeding
so i know this one isn't rocket science. it is just one of my staples. sometimes i will mix things up and add some mushrooms, spinach or whatever else is in the fridge. i figured i better post a recipe or i may forget how to do it.

we usually eat this with a piece of toast and some fresh fruit. oddly enough when going out for breakfast or brunch, i find myself ordering whatever is most similar to this on the menu.
